A fabulous group on the last vegan baking course here! Great bakes and great conversation!
We started by making a classic Victoria Sponge. Once learnt the sponge mix can be used for range of creative flavours. Inspired by the Great British Bake Off, lemon drizzle, red velvet, lemon and poppy seed, coffee and pecan, almond and orange were the choice of the day. Rachel was further inspired at home,
“I made some pistachio and rose cupcakes and they were yummy! I ground some pistachios and used the same quantity as the almonds would be and then added a tablespoon of rosewater to the mix. I just put a vanilla frosting on them and sprinkled some rose petals on the top! I have to say, they weren’t half bad!”
We also made a sweet shortcrust pastry which we used to make fresh fruit tarts with vegan crème patisserie. Vegan buttermilk and clotted cream was demonstrated to go with a freshly made batch of scones.
