Lovely Leftovers!

On a wet winter Monday it’s good to be warm and toasty in the kitchen. I love Mondays as there is often a dish of leftovers in the fridge. I had a Mexican course this weekend, so I found some smoky black bean and sweet potato chilli and a portion of refried beans to use up.

Rather than simply reheat it and serve it with rice I decided to make burgers. There was a slice from the end of a loaf in the bread bin so I whizzed it in the food processor to make breadcrumbs. I combined this with the leftovers and shaped it into patties.

Have a go! Use up some leftover chilli and breadcrumb or a grain. Or leftover mashed potato or other root veg. Even better some leftover hummus or bean pate! And a tin of beans, herbs and spices to suit.

    You have inspired me so will use up mash and leeks and make into patties !
