Simple Chocolate Pudding

I demonstrated this recipe recently for a cookery demonstration and thought it would be good to share here. It’s a lovely treat. I like using a good quality dark chocolate but to would work with leftover (is there such a thing?) Easter egg chocolate. Using a dark chocolate with a high cocoa content could make it a completely sugar free if needed.

Using long life silken tofu means that the pudding keeps really well. I put it in small coffee cups or glass ramekins. It could be made in small jam jars with lids and taken on picnics.

Simple Chocolate Pudding

  • 1 packet of silken tofu
  • 100g dark chocolate
  • Maple syrup/Sweet Freedom if needed to sweeten

Place the tofu in a blender jug. Blend until smooth.

Melt the chocolate in a bowl over a pan of simmering water.

Add the melted chocolate to the tofu mixture. Blend until combined.

Add the syrup if needed to your own taste. Blend again briefly.

Spoon the mixture into serving glasses and chill until needed. Dark chocolate will set the dessert. Raw cacao powder could be used for a softer set.

A small amount of brandy or rum could be added. Can be served topped with chopped mixed nuts and grated chocolate.
